Description
To soy or not to soy? That is the question. Soy is either promoted as a health food or is demonized as harmful, making it one of the most controversial foods that exist. In this course, Dr. Russell Marz overviews all there is to know about soy, including its history, composition, macro, and micro nutrient content, and the latest research. He discusses what the “dark side” of the soy industry is and how this impacts the types of soy we should eat. By taking this course, you will gain a deep understanding of this food and whether it is beneficial or harmful to consume.

Russell B. Marz, ND, LAc received his B.S. in Food & Nutrition in 1979 from BSU in New York. In 1983 he earned his doctorate at the National College of Naturopathic Medicine in Portland, OR and his masters degree in Chinese Medicine and acupuncture in 1994.
Dr. Marz has taught both basic science and clinical nutrition since 1988 as a professor of nutrition at NCNM, Western States Chiropractic College, SW College of Naturopathic Medicine and the Oregon College of Oriental Medicine. He published a 600 page textbook “Medical Nutrition from Marz” in 1997 and the 2nd edition in 2003. He is currently the medical director at the Tabor Hill Clinic in Portland, Oregon. In 2015 he was inducted into the NUNM naturopathic hall of fame.
